A healthy Waldorf salad might not seem like the most exciting thing to turn into a holiday dish, but I beg to differ. The crunchiness, color and textures all perfectly compliment each other. Using jicama in place of some of the apple adds an interesting taste and texture. And we swapped the mayonnaise for whole milk or greek yogurt for a delicious healthy substitute. Plenty of walnuts and and a few dried cranberries finish it out so the kids and husbands will actually eat it.
